Stacks of Snacks

I made a new diabetes friend. Her son was just diagnosed. I am learning so much.

Remember how, when you’re new, the CDE or endo might tell you to not eat carbs within two hours of having eaten carbs? Because stacking?

Anyway, since she has a hungry child and they follow the rule about not eating additional carbs within two hours of eating carbs, she told me about some fun “free” snacks. I love them.

baconSingle bacons:

Place a double layer of paper towels on a plate. Lay one bacon strip on top. Lay another paper towel on top of that. Microwave for one minute.

Like brownies made of cold gummy bears.

Knox Blox:

Combine four envelopes (entire contents of one box) of Knox gelatin and three packets of sugar free Jell-o in an 8 x 11″ pan or Tupperware. Whisk in 4 cups boiling water. Whisk or stir until dissolved. Cover and allow to cool to room temperature, then refrigerate for a few hours, or until set. Cut into brownie-sized squares.

Favorite flavor: raspberry.

  2. Although I am veggie and wouldn’t eat bacon or gelantine, I think it’s great not to stack the carbs although I am definately guilty of it if i still feel hungry after working out.
