She Made a Raspberry Parfait

These are not acai bowls.

These are not acai bowls.

I got this brilliant meal idea out of this beautiful magazine. In it is an article about a food truck called Bowl’d Over, and in that article is a recipe for Bowl’d Over’s acai bowls.

This is pretty much the same thing, minus acai and plus yogurt. This is also kind of like that one-ingredient banana ice cream but with a few more ingredients to make it feel legitimate as a meal, and on this hot day I think it is a miracle.

We’ve actually had it now for breakfast, lunch, dinner, breakfast.

Hot People Parfait (Serves 3 – 4)

Into the Vitamix or food processor: two frozen bananas (in chunks), one heaping cup frozen blueberries or raspberries. Blend until everything’s the consistency of soft ice cream. You will need to scrape down the sides of the container a few times.

Layer this miracle substance in glasses or bowls with full-fat plain Greek yogurt. Top with a heap of toasted coconut chips and walnuts.

Dial up/down the carbs/protein by varying the fruit/yogurt/nuts ratio. (<—Duh.)
