Happy D-blog week, day #5, Food Day!

Today’s theme was inspired by the legendary Adam Brown post, What I Actually Eat. Even if it wasn’t purely my idea, I did go to the effort of asking Karen if copying Adam could be a theme. And she said yes. You’re welcome!

cocoI wake up intending to drink water, or water with lemon, or hot water with lemon, grated ginger, and coconut oil. Often I forget and skip right to a pot of black tea or if someone else makes it, coffee with coconut cream.

Eventually I realize I am hungry and I make a flipped-over egg to eat with smoked salmon & greens

Oven 350. Melt 2 T coconut oil on a giant sheet pan. Combine right on the oily sheet pan: 4c sliced almonds, 4c big coconut flakes, 2c pepitas, sprinkle of salt, sprinkle of oats if you need people to believe it is traditional granola. Drizzle on a whisper of maple syrup. Toast in oven. Stir. Toast. Stir. Until toasted. Store in a giant jar.

this no-to-low oat granola. I have it with coconut milk (unsweetened vanilla kind from a box). It is basically nuts and coconut and pepitas toasted to make you think you have cereal. The problem with any granola is the little bit of milk left in the bowl asks for more granola, and more again, moving toward the asymptotic line of zero milk and never reaching it, even after 3-4-5 ladylike minirefills.

Seriously?

Right before I’m about to be called to pick people up from Dungeons or Dragons or lacrosse or Math Help, I realize I am very hungry and must eat. Normally Yesterday Me has packed part of her dinner in a container for my lunch. Sometimes that gal who packs up the dinner seems to not care for me very much. On the day I was documenting my lunch, she’d packed me plain raw spinach with about three cubes of granny smith apple. Does she even know me?

This is the moment I am so happy to be back in the Diet Coke. These days, my car snack is an icy Diet Coke and a Kind Bar. You’re not supposed to eat in the car, but away we go.

Therefore when I get back home I head for the almonds. Sometimes so many my jaw hurts. And sometimes another Diet Coke to slow down the almond train. But always with a few more almonds.

Hello to the prodigal string cheese. I’d packed it in the lunchbox anticipating this moment. String cheese is enhanced by sitting around all day in a school.

SPORTS/DOGS, HOMEWORK, AND FINALLY DINNER.

The chicken is not in this picture but it goes on the swords. Cabbage slabs and sweet potato spears feel fancy grilled. These are still raw. Sausage is not a vegetable, of course. That was an innovation that shall not be repeated.

Lately for dinner we grill a bunch of vegetables and a large quantity of this chicken. The cold grilled chicken saves the day two, three, or four times a week.

DESSERT

Strawberry rhubarb crisp. This low carb rhubarb crisp recipe. I love it. We eat it with ice cream. That was probably not the author’s intent. A lot of times I give the guys dessert as an after school snack instead of after dinner, but I thought dessert should go at the end of the post. This crisp can also be breakfast, with serious Greek yogurt where ice cream usually goes.

  1. Even as a lazy cook, my days often have almonds, string cheese, and Diet Coke. Everything else looks fabulous, but more work than my poor husband and I ever warrant. I do eternally miss granola so might have to give your recipe a try.

  2. This is the best! I love how you just go with the flow an thanks for bieing a happy diet coke drinker. I will be the first diabetic to say I don’t like diet coke. If I have a diet pop it’s usually ginger ale or 7-up. It’s rare tho. Like once every couple weeks because it leaves my guts….um….unhappy :/

    We should do this again. SOON!

  3. Wow — you eat a lot healthier than I do! I looked at my dietary intake yesterday (posted on my blog today) and it was really shameful. That’s what happens when you move out of your parents’ house (in 1992) and start taking responsibility on your own.

    In other news, who are you calling a Grown-Ass Lady? Granted, I’ve never actually seen your ass, but I refuse to believe it’s been under the influence of an undesirable growth spurt.

  4. After reading and deciding I needed some mid-morning almonds myself… I realize we no longer have any in the house. And my wife has the car today, so I can’t go out to the grocery store to get some. Well, nuts. Effn figures. 🙂

  5. Your diet coke/ almond combo snack sounds similar to my diet ginger ale / marcona almond = crack, addiction. Yep, just got up and got both. So good. Also I wish I could eat at your house. Just one meal. I don’t need to get greedy

    • Yours sounds so elegant. Is it fancy Diet ginger ale? Is there fancy d.g.a.? I love those spicy ginger beers but have never seen a diet one. I can’t imagine you have Canada Dry or Seagram’s.

  6. I love the TJ coconut cream. I use mine in smoothies with coconut milk, pineapple and mango (frozen) with some plain greek yogurt.

    I joined you today in the shameful eating of food in the car, with a Diet Coke and Almond and Coconut Kind Bar! The chewing on that particular Kind Bar goes on and on and on. You are the second person this week who mentioned rhubarb. I’ll take that as a sign.

  11. I think we should start a blog that is ONLY for showing what we eat and a unique rating system.

    Can everything be rated against the feeling you get when you’re super thirsty and all you need is a fizzy super icy diet pop (I am a diet pepesi girl, myself. But I won’t snub an icy diet coke)
