Aromatherapy Cake

This solved all of the fragrance problems. 

Visitor dog pee in house. Clean up. Begrudge. Moment later, discover also poo. Argh! Clean up but now entire frame of mind = indoor excrement.

Perfect timing. Fast-easy-fragrant-forgiving cake. Also I’m sorry I can’t help wash the floor or the urine-soaked items, I happen to be in the middle of baking a cake.

Bigfoot lazy method:

This is to remind me it was very dark on top when it was done.

Oven 350F. Grease a 9″ springform pan with coconut oil & dust with almond flour. Into a Vitamix, in this order:  3 eggs, 1/2 cup honey or coconut nectar, 1/4 cup melted coconut oil, 2.5 cups almond flour, 1/4 tsp salt, 1/2 tsp. baking soda. Blend until perfectly smooth and spread into prepared pan. For the topping, combine 1/4 cup melted coconut oil, 2T  (tablespoons!) cinnamon, 1/4 c coconut sugar, and 1/2 cup finely chopped walnuts. Sprinkle this evenly over the top of the batter. Run an offset spatula over the top, lightly pressing the topping into the cake. Bake 20 minutes. Rotate pan. Bake 10-ish minutes more, or until set and dark brown. Run a thin knife around the edge of the pan and remove the springform ring. Allow to cool for as long as you can stand it.

We called this 200g CHO/cake, and cut it into eighths. (That's 25g CHO/per eighth. That's how we bolused. As if this were true.) It is not low carb, but I guess it is high enough in protein and fat to not cause a huge crapfest, even though it tastes like a Bisquick coffee cake circa 1987. HAPPY.

  2. SO GOOD! Thank You!!! (Ours was dark too and SO GOOD oops already said that!) no almond flour to be found (every other kind including garbanzo!!!) so dumped purple bag from BJs in skins and all to vitamix (should have cleared counter for food processor, but too lazy but would have been less time as had to use the sieve…) and use crushed/diced almonds left in sieve for topping! Will definitely make this again! THANK YOU!!! Thanks Uncle Larry!!!
