6PM (#1): None of the delicacies I’d made for dinner (chicken marbella, roasted butternut squash, and roasted beets) appealed to B. (No? You didn’t want prunes and olives on a chicken?) We told him he didn’t have to eat but he did have to sit with us. I think he had a one bite of chicken and one tiny cube of squash and insisted that was extremely filling.
Some few minutes after dinner (#2) B made a PB&J. I can see where Joe wrote down 30g CHO and 2u. This is an often-eaten snack and no biggie.
8PM-ish: BG has rocketed up to 350. Everyone is like hwuh? I’m sure the double-ups were blazing and honking, but we didn’t notice. Someone thought to check the pump history: no insulin had been given for the PB&J. Aha! And durrrrr.
But also hwuh? again. Shouldn’t the BG have been higher than 350? And shouldn’t it have taken longer for the correction dose to kick in? (Longer than INSTANTANEOUSLY, I mean.) What I am asking is this: do you think his beta cells came back to life?
Meanwhile, Jack and I are going to TrialNet tonight to peek in and see if his miracle is still working.
Meanwhile to that meanwhile, everyone needs these blondies. And a friend who tells you to make them. They’re like these favorite cookies, but even faster to throw together. Like their predecessors, they also taste great raw.
Soon Found Out, Had a Heart of Garbanzo (Recipe w. Song Pun)
Oven 350. Vitamix together: one rinsed, drained can of chick peas, 1/3 c maple syrup, 1/2 c peanut butter or almond butter, 1T vanilla, a pinch of salt, 1/4 tsp. each baking soda and powder.
Plop this into a coconut-oiled 8 x 8 pan.
Toss 1/2 c mini chocolate chips on top and spread that around, simultaneously smoothing the batter into an even layer that reaches the edges of the pan.
Bake for 20-ish minutes until they seem set and a little bit toasty around the edges. Sprinkle a few more chocolate chips on top and smear that mess around. Sprinkle on some flaky salt. It will stick to the chocolate mess.
Allow this to cool. Eat.
