More Perfect Cookies

Catherine Newman recommend these cookies. Gluten free. Bigfoot make.

Perfect. Almond butter, dark chocolate. No grains. Chewy, crisp, salty, sweet. If ever become too thin, begin regimen of eat one dozen w. each meal.

Use the recipe at Slim Palate and/or the version at Ben and Birdy. This is probably not enough information: Oven 350F. Line 2 cookie sheets with parchment. In a large bowl with a wooden spoon, combine 1 cup creamy (probably doesn’t matter if it’s raw but) raw almond butter + 3/4 c coconut sugar. In a small bowl with a whisk or fork, combine 1 egg + 1 egg yolk. Mix the egg combo into the almond butter bowl along with 1T vanilla extract, 1 tsp. baking soda, and 1/2 tsp. salt. Stir in 4 ounces of chopped dark chocolate (or dark chocolate chunks). Use a #70 gelato scoop to make dough globs & arrange them 2″ apart on the prepared cookie sheets. Bake 10 minutes or until the cookies are spread out and a shade darker brown. Slide parchment onto cooling racks.

With my fiber beliefs and math, each cookie has 5.5g CHO. (200g CHO for the batch/36 cookies.)

Craving Meat Lunch

I do not like gardening, but I love free lettuce.

Two practically-0g CHO lunches Bigfoot like lately:

Number 1: Turkey pastrami, muenster cheese, and another thing. It’s salami.* Put the deli things on some flattish lettuce and top with another flat lettuce. Eat. (*Applegate Farms brand, but not the pre-sliced, wet kind. The deli person kind.)

Number 2: Combine cold leftover diced chicken breast meat with poppy seeds, sliced grapes, and Veganaise. Sprinkle with salt. Eat this chicken rolled up in a big lettuce leaf or tucked into crunchy romaine which can be held like a taco.

Serve #1 or #2 with icy Diet Coke. Put the Diet Coke toxins/dead animals out of your mind and move on.

    I’m so glad somebody else looked at that bag and thought, “what a perfect d bag!” I’m glad you posted about it because I was starting to feel guilty for not posting a picture of it to tudiabetes!
