Make chick pea chocolate chip cookie dough bites handful times, get sloppy with instructions. Winds up new-ish recipe. Treasure forever.
Preliminaries: Oven 350. Parchment paper on 2 cookie sheets.
Blitz together in Vitamix: 1 can chick peas, drained, rinsed (15 oz.), 1/2c + 2T nut butter (165g), 1/2c canned pumpkin, 1/3c ground flax (balances addition of wet pumpkin), 1T vanilla extract, 2T maple syrup, 20 drops liquid stevia , 2 t cinnamon (if I had pumpkin pie spice I would have used it), 1 t baking powder, pinch of salt. Stir in: 1c white chocolate chips.
#70 gelato scoop (walnut-size globs) dough onto prepared trays. Pat the globs into discs about 1/4″ high. They don’t spread out so they can be placed pretty close together. Bake 10 minutes. Rotate. Bake 5 minutes more. Cool on racks. Eat. Store in jar in fridge. I did not do the carbs math again. Makes 4 dozen cookies. I’m calling these 4.5g net CHO, same as last time.
Notes to self Thanksgiving:
bring GF home-prepared turkey breast & leg? Bubs’s self-reported desired menu: turkey, plain sweet potato no marshmallow, cranberry sauce, pumpkin pie, that is all. Probably also bring some sort pumpkin spice gelato. Maybe some GF bread. Apples. Maybe apple pie from GF bakery also? Brie-cranberry thing. GF crackers? Crudite platter w. crazy dip. Make spiced nuts. Bring utensils. Bring cutting board. ?
every day teplizumab or placebo morning, then frisbee @Yale, eat baguettes (preparation for celiac Ab testing). No side effects = probably placebo.
