Today made flour: Gluten Free All-Purpose as per Cooking for Your Gluten Free Teen. Next time, maybe use this formula, create custom blend. (<–Empower.)

Many, many little bags: white rice flour, brown rice flour, corn starch, potato starch (not flour), tapioca starch (also known as tapioca flour), xanthan gum, sweet sorghum flour.

It was really quite an operation.

Then figure out carb factor. (0.8.)

Then too tired make anything else, but thinking about chocolate chip.

    Interesting… I am not sure what “carb factor” or the value 0.8 means. Please explain… We have flirted with GF, but haven’t been forced to go all the way, like you guys… Still, I’m learning all I can… Thanks!

    it just means grams of carbohydrate per g of thing. In this case, 1g of flour would have 0.8g carbs or 100g of flour would have 80g carbs. very handy if you’re a big weigh-er.

      Me too! When I made the cookie dough, flour spattered all over my just un-glutened mixer and my heart seized up in fear. But then…oh, yay! Everything here is safe.
