PUMPKIN SPICE DOUGHNUTS, KIND OF LIKE GINGERBREAD

Baker’s Joy your micro-Bundt or actual doughnut pan. Heat oven to 350.

Blitz together in Vitamix: 140g almond flour (15g CHO); 1/2 t kosher salt, 1/4 t baking soda; 1 t each vanilla extract, ground cinnamon, and ground ginger; 1/2 t grated nutmeg, 2 eggs to = 3 fluid ounces; 3 oz. canned pumpkin (4g CHO), 1T molasses (15g CHO), 20 gtt liquid stevia extract; and 1/4 c melted butter.

Spoon the batter into 9 micro-Bundt spaces—that’s about 1/2 to 2/3rds full per space, and bake for 10-12 minutes. They will be puffed up and firm. Flip the delicious doughnuts onto a cooling rack.

Total = 34g CHO. Divided by 9 doughnuts =  approximately 4g CHO each.

  1. What would you recommend doing if I don’t own a blender or food processor? Would just a hand mixer be good enough? I want these NOW.

      I am sure a hand-mixer would be fine—please make them. IMOH, the only necessary equipment is the doughnut pan or micro-bundt pan. I don’t think these would be good or bake evenly as muffins.

  3. I have been jealously watching people all weekend come back from an apple farm near me that makes amazing pumpkin doughnuts, so I cannot tell you how happy I am to see this doughnut recipe. Trying it this weekend. P.S. I think almond flour is going to save the world.

    I made them today! I used 40g of maple syrup instead of stevia & added 1/4 c enjoy life mini chocolate chips to the batter. YUMMY.
