Green Beans

Addictive green beans. Sweet-spicy-salty. Bigfoot new hobby green bean evangelist. It recipe:

Heat a big wok until it is almost smoking. Swirl 1T peanut oil (or whatever high-heat oil) into the pan and add 1 pound of trimmed green beans (fatter American kind preferable to haricot verts). Stir frequently for about 5 minutes, until brown in spots. Add 2 scallions (sliced–white and green parts), 3 cloves garlic (minced), 1T minced or grated ginger, 2T tamari or liquid aminos, 1 tsp. red pepper flakes, and 1 tsp. agave or honey. Stir it all around until the beans are lightly coated in sauce. Devour.

Approx. 1/2g CHO per bean.

    Loving all the details about the dex…it’s like I’m getting to try it without trying it. When I go on dexcom website, they won’t send me info b/c not approved for under 18? Was rx from your endo enough to get around that? Do you keep receiver in your room at night? I was reading range is pretty good.

    • Yes–just the Rx from the endo. And yes–I keep the receiver beside my head. It works through walls, pillows, blankets…

      Once you get the Rx from the endo, the Dexcom rep will tell you to provide 30 days of BG records and they come right out and say to make sure your 30 days includes at least 3 BGs in the 40’s.
